Western countries are facing interdependent challenges: depletion of natural resources, pollution, climate change or chronic diseases. Structural changes, based on the paradigm of biodiversity (microbes, plants, animals) at the scale of territories, are needed. They require joint actions for food and agriculture to ensure unified human and environmental health. But this transition comes up against many lock-ins resulting from the economic functioning of markets.
