Codex Alimentarius Food Safety Standards are today considered essential references. Inevitably, legislators working on food safety regulations make references to these standards. Yet, Codex Alimentarius dynamism is far removed from local concerns. Established in 1963 by FAO and WHO, the Codex Alimentarius would be enhanced by greater efforts to promote healthy and sustainable development of territorialized food systems.
