Editorial The États généraux of food: An opportunity to accelerate the necessary transition of food systems in France, Europe and the world

The 5th food transition observed since the Neolithic period leads to three prospective scenarios: the first one characterized by the artificialization of food and concentration of firms, the second by total food quality, proximity of actors and participatory governance, the third being a hybrid. Based on the sociology of translation, the États généraux of food in France could be an original mechanism for moving towards a more sustainable food.
