The Physiologie du goût is a disparate work made up of heterogeneous fragments with multiple digressions, founded on an art of elusion and irony. Its singular focus on acids is explained by Brillat-Savarin’s project to restore sociability ; anchor the gustatory sense in the pleasures of tasting ; and re-establish culture on the foundations of nature.
