  • Abstract: This philological and lexical study focuses on the importance of food, culinary art, food hygiene and its materials in the Arab world, through the analysis of four medieval treatises on cooking. It thus highlights the role of culinary culture in Baghdad as well as the development of a technical jargon reserved for culinary art, which has become a form of knowledge and a culture that links physical and mental well-being with food and hygienic consumption patterns.
