Abstract: This article examines the sociological nature of the epulary hermeneutics in Balzac’s novels. Indeed, the representation of culinary habits and their cost underlies a social signalization that aims to decrypt the new hierarchies brought about by the Revolution, by constantly linking gastronomy and the economy.
