Jus de raisin : unité terminologique ou non ?

  • Abstract: Jus de raisin (grape juice) is a compound noun, a commercial juice of grape is a technical product (according with industrial norms), and the concept of “jus de raisin_grape juice_zumo de uva” has different names (e.g. zumo de uva or jugo de uva) but it has the same content in the whole word (for FAO). What is this product? Not a natural one, but a processed beverage. Many hyperonyms are useful for its definition: liquid ( physical object), product ( commercial item), food (for FAO) … What contains a fruit juice? Water, sugar, vitamins, trace elements … from a chimical point of view nothing special. What is more important? The processing (pasteurisation, filtration, packing). A plurilingual specialised dictionary based on real discourses from FAO, EU and sites of productors need two levels: level of concepts (properties of things and operations), level of terms (properties of words, phrases and sentences). The first level is important for manufacturers, distributors, supermarkets and … consumers! At the second level, the user of the dictionary may expect phrasings like “porter la valeur Brix à un niveau supérieur / increase the Brix level / elevar el nivel de grados Brix.” Yes, jus de fruits is a terminological unit, but just for experts or “semi-experts.”
